Mrs. Eunice Surle's Mardi Gras Party Cake

(Because I know Aunt Bert will want the recipe...)
Typed EXACTLY as it was in the cookbook!
Even with ingredients in bold type....

Preheat oven to 375 degrees.

Melt............2/3 cup Nestle's Butterscotch Morsels in
1/4 cup water, in saucepan.  Cool.

Sift
Together.....2 1/4 cups sifted Pillsbury's BEST All Purpose Flour
                    1 tsp Morton salt
                    1 tsp soda and
1/2 tsp double acting baking powder.  Set aside

Add...........1 1/4 cups sugar gradually to
1/2 cup shortening (part butter may be used), creaming well.

Blend in.....3 unbeaten eggs, one at a time, beating well after each.  Blend in melted butterscotch morsels;
                   mix well.

Add...........the dry ingredients alternately with
1 cup buttermilk, beginning and ending with dry ingredients.  Blend thoroughly after each
addition. (With electric mixer, use a low speed.)

Turn............into two 9 inch round layer pans, well greased and lightly floured on the bottoms.

Bake...........at 375 degrees for 25-30 minutes until cake springs back when touched lightly in center.
Cool; spread Filling between layers and on top to within 1/2 inch of edge.  Frost sides and
top edge with Sea Foam Frosting or whipped cream.

Butterscotch Filling
Combine 1/2 cup sugar and 1 T cornstarch in 2-quart saucepan.  Stir in 1/2 cup evaporated milk, 1/3 cup water, 1/3 cup Nestle's Butterscotch Morsels and 1 beaten egg yolk.  Cook over medium heat, stirring constantly, until thick.  Remove from heat; add 2 T butter, 1 cup coconut, chopped, and 1 cup pecans or walnuts, chopped.  Cool.

Sea Foam Frosting
Combine in saucepan 1/3 cup sugar, 1/3 cup firmly packed brown sugar, 1/3 cup water and 1 T corn syrup.  Cook until a little syrup dropped in cold water forms a soft ball (236 degrees F).  Meanwhile, beat 1 egg white with 1/4 tsp French's Cream of Tartar until stiff peaks form.  Add syrup to egg white in slow, steady stream, beating constantly until thick enough to spread.

Thank you! This sounds too sinful even for Mardi Gras. I cannot wait to try it--maybe Christmas when Mom is here. She would like that since cakes are her favorite. Aren't old cookbooks the most interesting things to read?
